The point though is that it is about tactics and strategies... the Israelis are trying to attack targets and the Iranians are trying to defend targets... the Israelis want to hit the right targets and the Iranians want to hide the locations of their most secret targets and perhaps fool the Israelis into attacking non targets so that if they fail to defend them there are no bad consequences.
It is more than just this plane and this missile against this radar or sensor and this air defence missile.
Even just the practise of defending and attacking is useful... what works and what doesn't... what started working but stopped because they adapted to your tactics... how easy are your tactics to defeat and how easy are theirs... this is stuff you don't learn in practise or exercise...
You can buy almost anything, but how it is used is the important thing.
By launching stand off attacks from neighbouring countries hiding amongst mountains suggests the S-400s in Syria can see F-35s at normal combat ranges... an F-16 or F-15 could launch attacks from neighbouring countries and could do it much cheaper and easier with more weapons and better range and flight speed, so we already learn that they think not only can the S-400 track them but the S-300 probably can too and they are too scared to risk it...
Any attack on Iran will likely use standoff munitions too so this is important practise and experience for Iranian forces as well... they need to carefully document their experience because this will be useful information for Iran.
For Israel, they are trying to hit targets, but don't want to give away too many secrets in terms of weapons... we have already seen them use supposedly neutral Russian aircraft to cover their attacks and they have tried to pretend to be US aircraft with US codes in US held areas of Syrian airspace for attacks too, so they pretty much have no shame and will abuse any neutrals position for a single sneak attack... friends like that eh...
